Barbacoa Hidalgo


A delicacy, a delicacy and for many, a light of salvation on Sunday mornings: the barbecue! Word with Mayan etymology, Baalbak'kaab, which means "meat covered with earth", is a preparation of lamb or goat meat wrapped in maguey leaves and cooked in an earthen oven. There is also a second etymology of the word, which comes from the Caribbean Taíno Barabicu (meat cooked on wooden scaffolding). Whatever its origin, the recipe has been with us since pre-Hispanic times, and we are grateful for it!
